These are small shops with waffle irons running all day and a counter that puts customers within a metre of the heat.
The extract has to pull hard enough to keep the smell off the seating without making the shop uncomfortable or noisy. That balance is most of the design.
We keep the plant compact and accessible, because in a shop this size there is nowhere to hide equipment and no room to work if a filter change means dismantling a ceiling.
