A production kitchen and the room it feeds
In most restaurants the kitchen and the dining room are designed by different people, and the result is a room that pulls air the wrong way through the pass.
We took both sides together. The extract rate over the range line sets the make-up air, and the make-up air sets what the dining room has to hold against.
Get that relationship right and the dining room stays comfortable without over-cooling, and the pass stops blowing kitchen air at the guests.
